Ruth’s Chris, one of this country’s formative prime steakhouses, recently celebrating the 50th anniversary of its founding in New Orleans with a special gala dinner. Since we were there, we decided it was high time for a chat with a top regional executive and a chef who long ago worked with Ruth Fertel herself.
